Today was a rainy day so we decided to head to Underwater World! Joey had no idea where we were going and when we arrived we covered his eyes until we we inside the walkway aquarium! When he saw what was around him he was so excited! Jumping up and down and just over the moon!

YUM!
On a recent trip to Chamorro Village we ate at Jamaican Grill and had an awesome appetizer! Chicken Kelaguen.
SInce not everyone can dine on such an awesome meal I attached a recipe I found that should be pretty close to the real thing!
Finadene Sauce
- 1 cup soy sauce
- 1 cup lemon juice
- 1 large onion, finely chopped
- 5 hot peppers, finely chopped
Chicken
- 1 whole broiler-fryer chicken, cut up
- 1 fresh coconut
- lemon juice
- 4 green onions, finely chopped
- 3 hot peppers, finely chopped
- 4 -6 pita bread
Directions:
- Mix soy sauce with lemon juice. Add finely chopped onion and peppers. Let sit a few days in the refrigerator to let the flavors blend.
- Open the coconut and discard the liquid inside. Grate the coconut meat. After the coconut is grated, pick it up in your hands and squeeze it over a bowl to collect the milk. Mix the milk with an equal amount of lemon juice and chill.
- Marinate the chicken in the Finadene sauce overnight. Grill/broil the chicken, basting with the sauce. After it is done, cool the chicken, debone and shred it.
- Mix the green onions, peppers, and coconut meat to the chicken. Slowly mix the coconut milk and lemon juice into the chicken, stirring well.
- Serve warm on fried home made tortillas.
- Optional: Fruit salad on the side

1st day of school!
Today was Joeys 1st day in Pre K! He absolutely loved it and had so much fun! (He did think it was a little too short at only 2 1/2 hours!) He couldn't wait to go back!

Whats cookin...
On the menu: Sausage and Peppas!
1 Pack mild Italian sausage
1 onion
2 bell peppers
Cook sausage, slice cooked peppers. Slice onion and pepper add to sausage. Let simmer on low for 30-40 min. Put on top rice or a bun!
