THE Murrayclan3
This past weekend we had the pleasure of having our family photos done by Roxie Phography. Long before we moved here I found Roxie and instantly fell in love. She is so talented and such a professional. Roxie is the only person I would trust to capture these moments! Here are a few.

Times they are a changin'!
So for the last 3 months I have watched a dear friend of mine transform her body and her life! ...Yes, I just watched! lol I was seeing her progress and cheering her on as she became more fit everyday. I had been running and eating pretty well throughout this time but an injury set me back about 2 weeks...and 2 weeks turned into a month. The weight I had lost (7lbs) was back on. I finally got up and started asking questions and soon I was hooked on this amazing plan that helped my friend lose over 30lbs!
The Jamie Eason Livefit 12 week trainer has completely changed the way I look at getting in shape!
On the website you will find 3 phases along with a menu plan and supplement info. The first phase you will have no cardio-this is the muscle building phase. Second you will incorporate cardio and cut back on carbs. 3rd you will do carb cycling and head towards the end of the program. There are tons of people who have had success with this because it is doable. I have been loving it!

Trick or Treat!
After planning the menu, cutting paper, cooking the food and even more cutting I had the most amazing Halloween party for Joey and his friends! We had a full spread, photo "area," and lots and lots of bats!

Foliage anyone?
So its OCTOBER! I love it when the leaves are changing, smelling the cold settling in, and every baked item tasting like pumpkins!
THEN I WOKE UP, and remembered I was in Guam.
But I can still be in love with the fact that its "fall" (minus the 80 degree weather). I will tackle baking, different recipes, decorating and most of all Halloween! Ive been pinning like a mad hatter and cant wait to start tackling some new ideas!
Now when do I change my clocks? Or do I not?

Underwater World
Today was a rainy day so we decided to head to Underwater World! Joey had no idea where we were going and when we arrived we covered his eyes until we we inside the walkway aquarium! When he saw what was around him he was so excited! Jumping up and down and just over the moon!
YUM!
On a recent trip to Chamorro Village we ate at Jamaican Grill and had an awesome appetizer! Chicken Kelaguen.
SInce not everyone can dine on such an awesome meal I attached a recipe I found that should be pretty close to the real thing!
Finadene Sauce
- 1 cup soy sauce
- 1 cup lemon juice
- 1 large onion, finely chopped
- 5 hot peppers, finely chopped
Chicken
- 1 whole broiler-fryer chicken, cut up
- 1 fresh coconut
- lemon juice
- 4 green onions, finely chopped
- 3 hot peppers, finely chopped
- 4 -6 pita bread
Directions:
- Mix soy sauce with lemon juice. Add finely chopped onion and peppers. Let sit a few days in the refrigerator to let the flavors blend.
- Open the coconut and discard the liquid inside. Grate the coconut meat. After the coconut is grated, pick it up in your hands and squeeze it over a bowl to collect the milk. Mix the milk with an equal amount of lemon juice and chill.
- Marinate the chicken in the Finadene sauce overnight. Grill/broil the chicken, basting with the sauce. After it is done, cool the chicken, debone and shred it.
- Mix the green onions, peppers, and coconut meat to the chicken. Slowly mix the coconut milk and lemon juice into the chicken, stirring well.
- Serve warm on fried home made tortillas.
- Optional: Fruit salad on the side
